The driving force behind this is the Director Dean Wilson with his large enthusiasm for creating innovative ideas, by noticing there was a huge gap in the market for bottled cocktails during lockdown. This was the start to building a brand-new concept within his company which was largely driven by the new way of life. With his great success on the last 4 restaurants Dean has spent the last 12 years creating and developing compelling modern Greek menus to inspire and delight locals and tourists in each town. With even special Greek cocktails that have been a huge success this seems to be the next step for the Olive Tree Brasserie brand.
